About this deal

Use your favorite kind of cream. I most often fill my strawberry shortcake with coconut cream, but any cool, creamy filling is delightful here. Make traditional whipped cream with heavy cream, sugar, and vanilla extract, or serve your shortcake with a scoop of vanilla ice cream. For a lighter variation, replace the cream with a dollop of Greek yogurt. There are minimal liquid ingredients in a shortcake, just enough to hold the dough together, resulting in what is known as a shortened dough.

This recipe is pretty much the same as the one I used for my Classic Vegan Biscuits, except with a little sugar added in for sweetness. Hint: This is why I strongly recommend against using coconut oil! Coconut oil melts at a much lower temperature, around 76°F (just a little above room temperature!), which means that it will definitely start to soften and melt as you prepare the dough… And your shortcakes definitely won’t have that same delicious texture! Then, add to the oven and bake at 400F for about 15 minutes until cooked through. Chilled full-fat coconut milk will work for a dairy-free option. You can add an additional dollop of whipped cream and a small strawberry on top for decorative purposes too. I think it looks pretty if you do. In a large bowl, mix together the all-purpose flour, granulated sugar, baking powder, baking soda, and salt until just combined. Add in the cubed vegan butter and cut using a pastry cutter or even two forks until the butter chunks are pea-sized and the mixture is crumbly. Vinegar:An acid is essential to most baked goods to react with the baking powder and soda to make our biscuits fluffy. Apple cider vinegar is our go-to for baking, but feel free to substitute it for white vinegar, which has a neutral flavor. Mintz, Sidney (2015). The Oxford Companion to Sugar and Sweets. Oxford University Press. p.88 and 157. Cadbury announces arrival of dark milk chocolate bars to the UK". Confectionery News. 28 August 2018.

This recipe make a small batch of biscuits, but since you're only using one biscuit per strawberry shortcake, this makes about 6 servings. Whisk together the dry ingredients. Once the large mixing bowl has chilled for 10 minutes, remove it and add in the flour, sugar, baking powder, baking soda, and salt. Mix until well combined. These Vegan Strawberry Shortcake Biscuits are pillowy delights of fluffy biscuit layers with coconut whipped cream and sliced strawberries floating between. Absolutely delicious and the perfect strawberry dessert ready in under 30 minutes! You won't believe that this recipe is dairy-free and low in sugar! Cornmeal– I love to make this recipe with medium-grind cornmeal. It adds a nice texture to the dough, but it’s not too coarse or crunchy. My go-to brands are Arrowhead Mills and Bob’s Red Mill.
